About the Winery
Since generations the domaine was born from the dissolution of the domaine Claire Dau. Martin took over the Estate in 1988. It is now a familial domaine, with a collective and precise work to get quality and respect of the nature. Now Martin, his sister Odile and his nephew, Pierre, Odile’s son.
A work in the vineyards associating old techniques (plowing, etc) and a following vineyard per vineyard to study the influences of the micro climates in the time. Precise, natural, no yeast, giving time to time, an “haute couture” elevage with bottling depending on natural clarification. Oak barrel are used depending on the Terroir.
Marsannay white is 100% stainless cask. The red wines are from No new oak, or larger new oak barrels of 600B (it is giving oak but less in proportion with the smaller barrel and of course less oxygène) up to the classical barrel -228L… 50% for Grands crus. Alcoholic fermentation is done after a few days of coldmaceration, native yeasts.
All wines are bottled un-fined and non filtered.Marsannay are vineyard, excepted for the Rosé, vinified single vineyard by single vineyard,Finottes being on sand soil.
Domaine Bart Marsannay
Dry Red wine: 100% Pinot Noir: The Marsannay les Finottes is on a sandy soil, the soil is light and well drained. Maturity is good. Work in the vineyards is “lutte raisonnee”, no Chemicals and a lot of care by hand; short pruning, good de-buds and leaves are put down by hand and grapes put in the right position. Harvest by hand with sorting, slow alcoholic fermentation after 4 days of cold maceration, put in barrels where 100% of malolactic fermentation is done. It is lightly racked one time and put back in the barrels and then bottled in January. Les Finottes are fruity, long in the mouth, and a lot of raspberry and some cherry with a touch of spice.
